PRIK, Chillies
Several varieties are available in Thailand. They vary in size and color, but all are spicy.
The milder types used in the West are sometimes substituted, but rarely.
They are used for flavoring. |

GRA-TIEM, Garlic
The clove as well as the entire bulb is used for cooking. Thailand is literally over- flowing with garlic. |
HORM DAENG, Shallot
Small, red onion which is used in nearly every Thai dish.
It has a special flavor, but some people prefer to do without it in their food. |

Nga , Sesame
These are small oval seeds which are white but with dark hulls. They are usually sold hulled. |

DORG JUNN, Mace
The orange-coloured outer covering of nutmeg, mace is used in making musaman curry paste.This plant is native to Indonesia. |
